Ingredients
Casserole:
2 cups brown rice
2 cups shredded red cabbage
2 cups grape tomatoes
1 15 oz can pinto beans
1 15 oz can corn
2 tsp salt
1 tsp chili powder
1 tsp cumin
2 cups crushed corn chips
Butternut Squash Sauce:
20 oz butternut squash
2 tbsp olive oil
1/2 tsp salt
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cumin
1/2 tsp smoked paprika
1.5 cups oat creamer
1/2 jalapeño (1 whole one if you’d like spicier)
Ground Turkey:
1 lb ground turkey
1/2 red onion, diced
1 tbsp olive oil
1 tsp minced garlic
1/2 tsp salt
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp smoked paprika
1/2 tsp turmeric
Topping Options:
Dairy Free Greek Yogurt

Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Start the butternut squash sauce by combining the squash, spices listed underneath “Butternut Squash Sauce” and 2 tbsp olive oil. Add to a baking sheet and bake for 35-40 minutes until the squash is soft.
- While the squash is baking, add 1 tbsp olive oil with 1 tsp minced garlic and 1/2 diced red onion to a skillet on medium heat. Sauté for 2-3 minutes and add your ground turkey and spices listed under “Ground Turkey”. Break the turkey apart slightly and increase heat to high. Cook for 5 minutes.
- Reduce heat for your ground turkey to low medium and cook for an addition 5-7 minutes until the turkey is cooked through. Set aside.
- Once your squash is cooked, let cool and add to a blender with 1.5 cups of oat milk and 1/2 jalapeño. Blend until smooth.
- Preheat oven to 350 degrees Fahrenheit.
- Now it’s time to assemble our casserole. In a 9×13 baking dish, add all the ingredients listed under “Casserole”, except for the corn chips. Add in your cooked ground turkey and butternut squash and mix well.
- Bake the casserole for 40-50 minutes. Remove and let cool.
- Top the casserole with the corn chips and your casserole is ready to enjoy! I topped mine with a dollop of dairy free greek yogurt and a squeeze of lime, but added additional options up above.
