The Inspiration

One dish that’s been etched into my memory is P.F. Chang’s lettuce wraps—I think about them way too often! When I found out I was allergic to soy, it was honestly devastating. So much of the food I loved was suddenly off the table.

In the past few years, I started to discover flavors and products that I can eat, but are still strong alternatives when cooking Asian cuisine. It’s taken a lot of trial and error and continues to be a learning process, but I’m starting to develop some delicious recipes that quench my cravings for soy. Making the Dish Soy Free

Coconut aminos are seriously my new best friend! Coconut aminos are a versatile and flavorful alternative to soy sauce. Made from the fermented sap of coconut trees, they have a rich, savory taste with a hint of sweetness and umami. It’s naturally gluten-free, soy-free, and lower in sodium than traditional soy sauce, adding depth and complexity to a variety of dishes without the soy and gluten content.

When shopping for coconut aminos, they can be found in most supermarkets! Trader Joe’s offers a great deal on their own brand, but if you’re shopping elsewhere, I recommend the Big Tree Farms brand. For added convenience, you can also grab a bottle on Amazon!. Good news is you can also purchase them on Amazon!

Another ingredient I love to use is sesame oil. Sesame oil is a rich, aromatic oil made from toasted or raw sesame seeds, known for its nutty, savory flavor and deep golden color. There are two main types: toasted sesame oil, which is dark and has a strong, roasted flavor, and light sesame oil, which is made from raw seeds and has a more neutral taste. Toasted sesame oil is often used as a finishing oil or for adding depth to dishes, while light sesame oil is used for cooking and frying due to its higher smoke point. Its distinct flavor will add a delightful nutty essence to your recipes.

Sesame Lettuce Wraps

Description

Enjoy these soy and gluten free Sesame Lettuce Wraps for a tasty, healthy meal! With ground chicken, avocado mayo, and cucumber salad, they’re a perfect, low-carb option.


Ingredients

Scale

16 large butter lettuce pieces

Chicken:

1 lb ground chicken

3 tbsp coconut aminos

1 tbsp avocado oil

1 tbsp sesame oil

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp gochugaru (or substitute with crushed red pepper)

1/2 cup water chestnuts

Avocado Mayo:

1 avocado

1/2 cup mayonnaise (I used avocado oil mayo)

1 tsp chili powder

1 tsp paprika

1/2 tsp salt

Cucumber Salad:

1 Persian cucumber

1 tbsp rice vinegar

1 tsp coconut aminos

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp gochugaru

1/2 tsp sesame seeds


Instructions

1. Add all of the ingredients for the chicken into a pan and cook over low medium heat for about 15 minutes until the meat is cooked through.

2. While your meat is cooking, prep your avocado mayo and cucumber salad.

3. For the avocado mayo, make sure you use a ripe avocado. Smash together with the mayo and spices until mostly smooth (some chunks are ok).

4. For the cucumber salad, slice the cucumbers into very thin slices and mix well with all the ingredients.

5. Once your chicken is ready, time to make your lettuce wraps! Double up your lettuce so they don’t break. Add the avocado mayo, then chicken, and top with cucumber salad. Enjoy!
