Spicy Veggie Egg Scramble with Sun-dried Tomatoes & Jalapeños

Ready to spice up your morning breakfast? This Spicy Veggie Egg Scramble combines mushrooms, sun-dried tomatoes, and jalapeños to make the perfect breakfast to start your day!

Starting my day with veggies and protein

This dish truly keeps me full all morning. I love to add a TON of veggies to my morning breakfasts whether that’s in a smoothie or in my eggs. The blast of nutrients is a great way to start the day.

I love trying out new mushrooms. You can use regular sliced white mushrooms in this dish or mix it up! For example, I found Brown Beech Mushrooms for only $2.99 at Trader Joe’s. I originally tried these when visiting my boyfriend’s parents. They love to cook up veggies throughout the week and throw them in a scramble for breakfast. My boyfriend loves to cook (and frankly is better than I am at it) and whipped up an easy breakfast for me. This is where I fell in love with those little ‘shrooms! Imagine my excitement when seeing them at TJs for that cheap.

Starting my day with protein is a game changer as well. There are days when the tummy troubles (aka why I started this blog) are coming on a bit strong and I need to stick to toast for breakfast. I swear I am hungry within an hour on those days. Eating protein and veggies for breakfast gives the energy to write yummy recipes all day long!

Cheese: I used goat cheese in this recipe, but I’ve used feta cheese and it’s equally as delicious! You could also use Cotija, Pepperjack, or any other of your favorite cheeses!

Spicy Veggie Egg Scramble

Ready to spice up your morning breakfast? Try this Spicy Veggie Egg Scramble! 


Ingredients

Scale

3 eggs (I use @vitalfarms organic eggs)

1/2 medium jalapeño

1/4 cup sundried tomatoes

1/2 cup mushrooms

1/4 cup goat cheese

1/4 cup @traderjoes jalapeño sauce

1 tsp olive oil (or butter)

1/4 tsp smoked paprika

1 tbsp fresh parsley for garnish

Salt and pepper to taste


Instructions

1. Chop your jalapeños, sundried tomatoes, and mushrooms. Place in pan with the oil and sauté on low medium heat.
2. In a separate bowl, whisk your eggs with the smoked paprika, salt, and pepper until egg whites are no longer visible. 
3. Once the veggies are almost cooked through (about 3-5 minutes), add your eggs to the pan with the veggies. Stir slowly to create large scrambled pieces. 
4. Cook the eggs to your preference (a little runny or well done) and then add in your goat cheese. Stir until it starts to melt into the scramble.
5. Garnish with jalapeño sauce and parsley and your ready to enjoy!
