Spicy Watermelon Rum Punch

Is anyone else into spicy cocktails? Maybe it’s because this is JALAPEÑO Kitchen, but I am LOVING some spice in my adult beverages. This Spicy Watermelon Rum Punch was as fun to drink as it was to make.

Choosing Rum

A few years back, I took a trip to Puerto Rico for work. We had a day to explore the old town and went on a food and drink tour as a group. This is where I fell in love with rum. The inspiration behind this drink was a watermelon rum cocktail I had there that I think about probably too often. (I wish I could remember where I had it). Rum is also so fun for summer and reminds me of sitting on a beach somewhere!

Unfortunately, I am not a tequila fan, but this drink would go great with tequila or vodka as well. If alcohol isn’t your thing, just remove the rum and this makes a fantastic mocktail!

THE Simple Syrup

I say it like that because this is the best simple syrup you’ll ever make.

In a saucepan, combine sugar, water, orange peel, lime peel, and jalapeño and let simmer until the sugar dissolves. This tastes best if you let cool and have it sit in the refrigerator overnight.

I’m a bit biased to this cocktail but you can mix this simple syrup into any of your favorite cocktails or even just some club soda for a tasty summer drink.

Using kombucha in cocktails

I absolutely love using kombucha in my cocktails. Maybe a part of me thinks the health benefits of probiotics will outweigh the effects of alcohol? (LOL) I love how they add a tangy zest to any drink. Give it a try! If you hate it, you can always substitute with ginger beer. I used Better Booch in this recipe, but also love Health-Ade Kombucha and Wild Tonic.

This Spicy Watermelon Rum Punch is sure to be your favorite summer cocktail!


Ingredients

Scale

Ingredients:

1 cup fresh watermelon

1 oz rum (or tequila)

1oz lime juice

3oz ginger kombucha (I used @betterbooch ginger boost!)

1 slice jalapeño for garnish

1/2 oz simple syrup

1 slice lime for garnish

Simple Syrup (Makes about 1 cup):

1/2 cup sugar

1 cup water

5 slices jalapeño

3 lime peels

3 orange peels


Instructions

1. First, make your simple syrup. Combine the sugar, water, jalapeños, lime peels, and orange peels (only the ingredients listed under the simple syrup above) into a pot.
2. Place on a low medium heat until the sugar dissolves. This tastes best if you let sit overnight, but can be used once cooled.
3. Once your simple syrup is ready, combine the watermelon, rum, lime juice, and syrup in a blender. Blend until smooth.
4. Pour your cocktail in your favorite glass over ice. Top with the kombucha (make sure not to put the kombucha in the blender) and garnish with a lime and some jalapeños. Enjoy!
