1/2 tsp Italian Seasoning

Juice from 1 lemon

1 tbsp fresh parsley


Instructions

1. Bring a pot of water to boil.

2. While your water is heating, wash and cut the potatoes into 1.5-2 inch pieces. 

3. In the boiling water, add 3/4 tsp baking soda and 1 tbsp salt. Add the potatoes.

4. Boil for 8-12 minutes until they begin to soften.

5. Drain and place back in the pot. Let sit for 5 minutes or so. Preheat the oven to 425F.
