  • Baking Sheets: These meatballs are a sheet pan recipe so of course we need our baking sheet!
  • Meat Thermometer: An absolute must when cooking meat! This has been a game-changer in starting to cook more meat for myself.
  • A good knife: If you’re making the Tomato Cucumber Salad, you’ll need a good knife for cutting your veggies!

These gluten and dairy-free lemon herb turkey meatballs are quick, easy, and packed with fresh flavor. Follow these step-by-step instructions to make a healthy weeknight dinner or meal prep staple:

  1. Preheat the oven
    Set your oven to 425°F (220°C) and line a baking sheet with parchment paper. Lightly grease the parchment with 1 teaspoon of olive oil or olive oil spray to prevent sticking.

Avocado Dressing:

1/2 avocado, pit and skin removed

1 tbsp olive oil

1/2 cup oat milk

Juice from 1/2 lemon

1 garlic clove

1/2 tsp salt

1/2 tsp nutritional yeast

1/8 cup fresh parsley

1 tsp fresh dill


Instructions

1. Preheat the oven to 425 degrees Fahrenheit.

2. Combine all of ingredients in a mixing bowl and combine well.

3. Add parchment paper to a baking sheet and grease with 1 tsp olive oil (I used olive oil spray).

4. Using your hands, form the meat mixture into 12 meatballs, around 2 inches in diameter and place on the baking sheet.

5. Bake for 8 minutes, then flip the meatballs. Bake for another 8-10 minutes until the internal temperature reaches 165 degrees Fahrenheit and they brown slightly.

6. While your meatballs are cooking, prepare your Tomato Cucumber Salad, Jasmine Rice, and Avocado Dressing. For your avocado dressing, combine all of the ingredients in a blender and blend until smooth.

7. Remove from the oven and let cool. I enjoyed with my Tomato & Cucumber Salad, Jasmine Rice, and a creamy avocado dressing!
