Salad: 

9 oz shredded romaine

4 radishes, sliced thinly

1/2 cup fresh parsley

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Combine all of the chicken cutlet ingredients in the bowl (besides the 1/4 cup breadcrumbs for topping) and mix well. 
  2. Line a baking sheet with parchment paper and coat with 1/2 the olive oil spray to prevent sticking. Spread your chicken onto the baking sheet until it makes about a 3/4 inch thick large “cutlet”. Top with the remaining breadcrumbs. 
  3. Bake for 30 minutes. Spray the top with the remaining olive oil spray and broil for 5-7 minutes until crispy.
  4. While the chicken is cooking, combine your dressing ingredients in a blender and blend until smooth. 
  5. Prepare your salad by combining the ingredients and coating with dressing.
