Description

Spice up your lunch with this Curried Chicken Salad Wrap! Quick to prep with shredded chicken, apples, raisins, and curry, all in a gluten-free tortilla.

Ingredients

4 Siete Food’s burrito size tortillas

1 lb shredded chicken (to make it easy, I buy the precooked chicken from sprouts)

1 apple

2 stalks celery

1/2 cup raisins

1/2 cup mayonnaise (I used Chosen Foods avocado mayo)

1 tbsp curry powder

1 tsp salt

1 cup apricot jam or mango chutney


Instructions

1. Chop up the celery and apple into small pieces. Combine with the chicken, mayo, raisins, and spices.

2. Warm your tortillas for about 15 seconds in the microwave and add the jam to the tortillas.

3. Split the chicken salad into 4 parts and add to your tortilla. Roll up and enjoy!
