The Inspiration

Growing up, Tortellini and Peas was one of my all-time favorite meals. It was the one dish in our household that never had any leftovers. I still remember saving all my peas until the end, savoring them with the rich flavors of olive oil and butter. (Yes, I was that kid who actually loved peas.)

Recently, I found myself craving this childhood classic and decided to give it a little twist by adding artichokes. Our original family recipe was simple—mainly olive oil and parmesan—but always delicious. This version, with its creamy artichoke sauce, elevates it to a whole new level

Finding Gluten Free Tortellini:

I used Taste Republic’s Gluten-Free Tortellini for this recipe. It’s my go-to choice because it’s easy to find in stores, especially around Southern California, and it’s also available on Amazon for added convenience!

Another great option is Manini’s, which offers a gluten-free tortelloni. (Tortelloni is similar to tortellini but slightly larger in size.)

The Secret is in the Artichokes

The real magic of this dish lies in the artichokes! Enjoy the ultimate comfort food with this Creamy Creamy Gluten Free Tortellini with Artichoke & Peas recipe, featuring a rich sauce, tender pasta, and flavorful artichokes and peas, all enhanced by fresh basil and a hint of crushed red pepper.


Ingredients

Units Scale

1 9oz pack tortellini (gluten free)

1 15 oz can artichokes

1 cup peas

1.5 cups cream or oat creamer

3 tbsp olive oil

1 cup shredded parmesan

1 tsp salt

1 tsp Italian Seasoning

10 leaves fresh basil

1/2 tsp crushed red pepper

1/2 tsp garlic powder

2 cloves fresh garlic

1 cup ricotta salata

Black pepper to taste


Instructions

1. Mix 1 tbsp of olive oil, Italian seasoning, 1/2 tsp salt, and garlic powder in a bowl.

2. Coat your artichokes in the olive oil mixture and mix well. Place in the air fryer and cook at 390 degrees Fahrenheit for 12 minutes.

3. Once your artichokes are done, place half the artichokes, fresh basil, and cream into the blender and blend until smooth.

4. In a pan, heat the remainder of the olive oil with the fresh garlic. Once it comes to a sizzle, add your sauce and peas. Cook for 5 minutes.

5. Next, add in the remaining artichokes and pasta. Cook for the amount of time listed on the pasta packaging.

6. While your pasta is cooking, add in the cheese, 1/2 tsp salt, and crushed pepper.

7. Top with ricotta salata and black pepper to taste and enjoy!
