Crock-Pot Apricot Chicken

It is officially apricot season! While I love eating Apricots plain, I wanted to try them out in a savory dish. This Crock-Pot Apricot Chicken was the perfect mix of sweet and savory, while making use of this in season fruit!

Apricot Season

Apricots are in season late Spring through early Summer. I can only find them in stores for a short period of time and definitely try to make use while I can!

With California being the leader in U.S. Apricot production, we get our fair share of them in Southern California when it’s their time of year. They almost remind me of a bite size tart peach. Once I have a pack, it’s hard to not finish them all in a day!

A Crock-Pot Summer

While it never gets too hot where I live, we do get the sun coming in through the windows in the afternoon. Our living room and kitchen often get up to 80 degrees Fahrenheit even with the AC running full blast! With this, I only try to cook in the mornings or later in the evenings when we hit the summer months.

Crock-Pots are traditionally known for their cozy fall and winter recipes, but it’s a great tool to use in the summer. While the stove and oven tend to heat the home further, the crockpot limits the additional heat your kitchen and it’s SO easy.

If you’re deciding which appliances to add to your kitchen, a Crock-Pot is a must. They are relatively cheap compared to some other appliances and make cooking delicious meals quick and simple. I’ve also found the “Warm” option to be excellent for serving at parties. See below for the link to my crockpot.

How to Serve

There are so many different ways you can serve this chicken! Here are some of my favorites:

  • Brown Rice: You will barely need to season your brown rice because the sauce over this chicken will go great with it! I put my chicken directly over the brown rice and ate it together in each bite.
  • Leafy Greens: I personally added a side of broccoli, but these flavors pair well with a side of sautéed kale or Swiss chard. Green beans are also an excellent option.
  • Wine (duh!): A crispy wine is a must when savoring these fresh summer flavors. Apricots are best paired with a sweet white wine, but as someone who doesn’t love my wine super sweet, I’d personally pair with a Pinot Grigio or Sauvignon Blanc.

Buying Spices in Bulk

I wanted to united minced dried onion for this recipe. I don’t use minced onion often and wanted just enough for my recipe. When looking for it at Sprouts Farmer’s Market, they had it in the bulk section! This is a great option if you want to save on your spices. I was able to get just enough for this recipe at a quarter of the price for the same amount bottled.
