Gluten- and Dairy-Free Sheet Pan Protein Pumpkin Pancakes

Sheet Pan Protein Pumpkin Pancakes

Have you ever wanted a quick, protein-packed breakfast that’s both gluten and dairy free? These Gluten- and Dairy-Free Sheet Pan Protein Pumpkin Pancakes are the perfect solution. Packed with pea protein, pumpkin, and warm fall spices, they’re easy to make in one pan and perfect for meal prep. Instead of flipping pancakes one by one, you bake the whole batch on a sheet pan, then slice and serve throughout the week. They’re soft, flavorful, and filling, making them an ideal breakfast for busy mornings or a cozy weekend brunch.

The Inspiration

I’m always struggling with what to eat for breakfast, so I wanted to create something that’s quick, satisfying, and keeps me fueled all morning. That’s how these Sheet Pan Protein Pumpkin Pancakes came to be. I started making them in early fall and figured it was about time I shared them with you. Funny enough, they began as “microwave in a bowl” pancakes and slowly evolved over time. I’ve tested and tweaked this recipe at least 15 times to get the texture, flavor, and protein balance just right, and I finally feel confident sharing it with you all.

What I love most about these pancakes is having a protein-packed breakfast ready to heat up. I personally can’t do a sugary breakfast because it immediately depletes my energy for the morning, so I designed these to be flavorful without adding extra sweetener. The pumpkin spice and cinnamon do most of the work, creating a cozy, autumnal flavor. If you like a touch of sweetness, you can drizzle a teaspoon of maple syrup on top, but they’re delicious on their own. These pancakes have quickly become my go-to breakfast for busy mornings or a relaxed weekend brunch. • Whisk: A whisk is perfect for achieving a smooth, lump-free pancake batter.
  • Baking Sheets: I line a baking sheet with parchment paper to prevent sticking and for easy clean up.

Additions and Substitutions: Gluten- and Dairy-Free Sheet Pan Protein Pumpkin Pancakes

If you want to customize your Gluten- and Dairy-Free Sheet Pan Protein Pumpkin Pancakes, here are some easy additions and substitutions that work well while keeping them protein-packed and allergen-friendly.

Add-ins for Extra Flavor:

  • Add 1–2 tablespoons of cacao nibs or dairy-free chocolate chips for a touch of chocolate flavor.
  • Mix in 1 teaspoon of extra vanilla extract or pumpkin pie spice for a more pronounced fall flavor.
  • Stir in a pinch of ground ginger or nutmeg for added warmth and spice.
  • Fold in ½ cup of fresh fruit such as blueberries, raspberries, or diced apples for natural sweetness and extra nutrients.

Protein Boosters:

  • Swap the pea protein for another plant-based protein powder like rice or hemp protein, but note the texture may slightly change.
  • Add a tablespoon of sunflower seed butter or tahini to the wet ingredients for extra protein and creaminess.

Ingredient Substitutions:

  • Oat milk can be replaced with any dairy-free milk like coconut or hemp milk.
  • Pumpkin puree can be swapped with sweet potato puree for a slightly different but equally delicious flavor.

Topping Ideas:

  • Top with a teaspoon of maple syrup or a sprinkle of cinnamon for extra flavor.
  • Serve with fresh fruit, dairy-free yogurt, or a drizzle of fruit puree to add some extra color and taste.

These additions and substitutions make it easy to tailor your protein-packed pumpkin pancakes to your taste preferences while keeping them gluten-free, dairy-free, soy-free, and perfect for a quick, energizing breakfast.

Step 1: Preheat the Oven
Preheat your oven to 350°F and line a baking sheet with parchment paper. This ensures your pancakes bake evenly and don’t stick.

Step 2: Combine Dry Ingredients
In a large mixing bowl, whisk together 1 cup oat flour, 4 scoops pea protein, 1 tablespoon cinnamon, 2 teaspoons pumpkin spice, 2 teaspoons flax seed, 1 teaspoon baking soda, and ½ teaspoon salt. Set aside.

Step 3: Mix Wet Ingredients
In a separate bowl, whisk together 1 teaspoon apple cider vinegar, 1 cup pumpkin puree, 1 cup oat milk, 8 eggs, and 1 teaspoon vanilla until smooth and fully combined.

Step 4: Combine Wet and Dry Ingredients
Slowly add the dry ingredients to the wet ingredients in batches, whisking until fully incorporated. Make sure there are no large lumps but don’t overmix.
