Crunchy Lentil and Cucumber Sea Salt and Vinegar Sandwiches are gluten-free, dairy-free, nut-free, and perfect for a healthy snack.
Ingredients
1/3 cup Lentil Telepathy Sea Salt and Vinegar Snack Lentils
8 slices gluten-free bread
1 Persian cucumber, thinly sliced into rounds
Avocado Mash
1 1/2 ripe avocados, peeled and pitted
Juice of 1/2 lemon
3/4 tsp yellow mustard (or to taste)
1 tsp fresh dill, chopped
1/4 tsp salt
Instructions

In a bowl, combine all avocado mash ingredients. Mash until smooth with no large chunks.

Spread a thin layer of avocado mash on one side of each bread slice.

On four slices, arrange cucumber rounds over the avocado. On the other four slices, sprinkle Lentil Telepathy’s Sea Salt and Vinegar Snack Lentils.

Pair one cucumber slice with one lentil slice and press together to form a sandwich.

For a finger sandwich style, trim off the crusts before serving.
