Description

This dairy-free, nut-free basil spinach pesto is quick, flavorful and perfect for pasta, veggies, and more ready in 10 minutes!


Ingredients

Scale

2 cups fresh basil

1 cup fresh spinach

1/2 cup olive oil

3 cloves garlic, peeled

Juice + Zest from 1/2 lemon

2 tbsp nutritional yeast

1 tsp salt

1/2 tsp ground black pepper


Instructions

  1. Rinse and pat dry the basil and spinach. Peel the garlic cloves and zest the lemon.
  2. In a food processor or blender, combine basil, spinach, garlic, lemon juice and zest, nutritional yeast, salt, and pepper.
  3. Pulse to combine, then slowly drizzle in olive oil until smooth.
  4. Taste and adjust seasoning if needed.
  5. Serve immediately or store in an airtight container in the fridge for up to 5 days.
