Try these Swedish Style Meatballs with a creamy dairy-free mustard sauce – a delicious, allergen-friendly twist on a classic favorite!
Ingredients
9 oz gluten-free egg noodles (I used Trader Joe’s)
1 tbsp dairy-free butter
Meatballs:
1 lb ground beef
1/2 cup gluten-free panko breadcrumbs
1 egg
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp nutmeg
1/2 tsp allspice
1 tsp minced onion
1 tsp garlic powder
1/3 cup unsweetened oat milk
Sauce:
1 tbsp dairy-free butter
2 tbsp gluten-free flour
2 cups beef broth
1 cup unsweetened oat creamer
1 tbsp soy-free Worcestershire sauce
1 tsp Dijon mustard
1 tbsp coconut aminos
1/2 tsp salt
1/2 tsp pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1 tbsp fresh parsley, chopped
Instructions
- In a mixing bowl, combine the ground beef, gluten-free panko breadcrumbs, egg, salt, pepper, nutmeg, allspice, minced onion, garlic powder, and oat milk. Mix well, cover, and refrigerate for 30 minutes.
- Heat a pan over low-medium heat and add 1 tbsp of dairy-free butter, allowing it to melt and coat the pan.
- Form the meat mixture into 1-inch balls and place them in the pan.
- Sauté the meatballs for about 10 minutes, flipping 2-3 times to brown all sides. Remove the meatballs from the pan (they may not be fully cooked yet).
- In the same pan, add the remaining 1 tbsp of butter and the flour. Stir well until a roux forms.
- Gradually whisk in the beef broth, stirring until the roux dissolves.
- Add the mustard, Worcestershire sauce, coconut aminos, salt, pepper, onion powder, garlic powder, and fresh parsley to the sauce. Let it simmer for about 5 minutes, stirring occasionally.
- Meanwhile, bring a separate pot of water to a boil to prepare your pasta, cooking it for 1 minute less than package instructions.
- Add the unsweetened oat creamer to the sauce, mixing well.
- Return the meatballs to the pan, gently coating them in the sauce. Simmer for another 8-12 minutes until the meatballs reach an internal temperature of 160°F (adjust time if using a different type of meat).
- Once the meatballs are fully cooked, add the pasta to the pan and cook for an additional 1 minute, stirring to coat.
- Top with extra fresh parsley and ground black pepper, and enjoy
