Zucchini Pasta

I am still dreaming about this pasta! Sometimes you need a cozy summer dish and this is really IT. This dish is also filled with hidden veggies so great for those who are looking for ways to sneak in the nutrients.

The Inspiration

I was recently in Sicily and took an incredible tour to Erice and Marsala. In Marsala, we had lunch at a winery (where funny enough we were not served Marsala wine). The guide called ahead to inform the chef of my allergies and the chef completely delivered. One dish was supposed to be a pesto sauce, but he pivoted to a zucchini sauce. While I didn’t receive the recipe, I tried to do a remake when I got home. I think this recipe came out pretty dang good if I must say so myself.

The Winery

The winery was called Donna Franca winery after the wife of the couple that put Marsala wine on the map. I wish I had more pictures from the day, but was honestly just soaking it in!

    Description

    Delicious gluten-free creamy zucchini sauce.

    Ingredients

    Scale

9oz of your favorite pasta (I used Manini’s gluten free Spaghettj)

    2 medium sized zucchini’s

    1 bulb garlic

    3/4 cup oat milk

    3/4 cup white onion

    3/4 cup chopped fresh basil

    1/2 cup grated Parmesan

    1/4 cup fresh parsley

    1 tsp of salt

    1 tsp of pepper

    2 tbsp olive oil

    1 fresh lemon (for zesting)

    1/2 cup shredded Parmesan

    Instructions

    1. Chop of zucchini and coat with tbsp of olive oil and 1/2 tsp of salt and pepper. Place in oven at 350 degrees Fahrenheit for about 20 minutes.
    2. Cut the head off the bulb of garlic and place the bulb in aluminum foil. Drizzle with olive oil and a pinch of salt and pepper. I placed on the same baking sheet as the zucchini, but roast for 40 minutes.
    3. While the vegetables are roasting, I sautéed the onion in a pan.
    4. Once the vegetables are cooked and cooled, add to the blender with the grated Parmesan, oat milk, and herbs until smooth. Save about 1/4 cup basil for topping.
    5. Bring a pot of water to a boil and cook for about 30 seconds less than the time listed on your pasta’s packaging. Add the sauce to the pan for 2-3 minutes on low heat while your pasta is cooking to warm it up. 6. Add the pasta to the sauce and mix together with the burner on for 1-2 minutes.
    7. Plate and top with the remaining basil, shredded Parmesan, and about 1 tsp of lemon zest or to taste.
Feel free to add red pepper to taste or additional salt and pepper. Enjoy!
